Our Story


Chef and Co-owner Rafael Vargas’ passion for food started at a young age, enjoying the cuisine of both his native city of Chicago and the cuisine of his parents native Michoacan, Mexico (UNESCO Intangible Cultural Heritage List for its cuisine). His early experiences ignited his love for food and propelled him into his career. He spent time in Chicago working with respected chefs including Michael Kornick (DMK Group & mk fine dining), Carlos Ysaguirre (Anteprima & Acre), and Marty Fosse (Bar Ombra & Spiagga). The most valuable lesson he has learned is that all great food begins with sourcing the best local ingredients from farmers who care deeply about what is served in their communities. Rafael hopes to use his experience and love for cuisine to provide you with simple honest locally sourced cuisine.
